Everyone make cookies for Christmas and chocolates at Easter, eats gummy and gross candies at Halloween (gummy worms, gummy body parts, what next!), but what about Thanksgiving?
Here’s a cute, easy treat to celebrate the upcoming holiday (not to mention impress the inlaws).
Chocolate Midnight Cupcakes
Ingredients
- 2 cups sugar
- 2 cups flour
- ¾ cup cocoa
- 1 cup hot coffee
- 2 eggs
- 2 tsp. Baking soda
- 1 tsp. Baking powder
- 1 tsp salt
- 1 cup milk
- 1 cup oil
- 1 tsp. Vanilla
Directions
- Preheat oven to 350
- Combine all ingredients in large mixing bowl.
- In cupcake pan, spoon batter ¾ of the way full.
- Bake for 25 to 35 minutes or until toothpick comes out clean.
Chocolate Buttercream Icing
Ingredients
- 2 2/3 cups 10x sugar
- ¼ cup cocoa
- 6 Tbs. butter
- 5 to 6 Tbs. Milk
- 1 tsp. Vanilla
Directions
- Combine sugar and cocoa in a small bowl.
- Cream butter with ½ cup of sugar mixture in medium bowl. Alternately add remaining cocoas mixture and milk until icing is a spreading consistency.
- Stir in vanilla.
To Decorate
Ingredients
- Candy Corn
- Chocolate Sprinkles
Directions
- Icing cupcakes.
- Using an icing bag or a Ziploc bag with one of the corners snipped off, pipe a small mound of icing on one side of the cupcake to look like the head of the turkey.
- Add a piece of candy corn for a beak.
- Use candy corn on opposite side for tail feathers. Push tips of the candy into the cake to hold in place.
- Sprinkle chocolate sprinkles around tail and head to look like feathers.
- Store loosely covered.
